Bologna sausage, also called “baloney” is a sausage derived from the Italian “Mortadella”,

Bologna is a finely ground pork sausage containing cubes of pork ham. Typical seasoning for bologna includes black pepper, nutmeg, allspice, celery seed, and coriander. Myrtle berries give it its distinctive flavor. Bologna belongs to the family of “cold cuts” and shall not be cooked but rather be used as a sandwich, lunch, or snack.
